I will be 18 on the cruise and my parents have no problem with me having a few. I have heard some things like when we get out to sea a certain distance i can drink or that my parents can sign a waiver. Someone help!! Thanks

Generally, cruise ships follow the same laws as though they were on land in whatever port they have sailed from. Therefore if they sailed from Florida and the drinking age is 21 then there rules are 21 as well.
You will find this to be the same for very many of the rules.

NOPE - Carnival does NOT have a waiver.
here's what they policy is:
Drinking Alcohol On Board
The minimum age for the purchase and/or consumption of alcoholic beverages in the bars, lounges and gift shops is 21 years of age. Carnival reserves the right to refuse the sale of alcoholic beverages to anyone. In the event that Bar/Restaurant/Gift Shop staff are in question that a guest is less than 21 years old, they shall request picture identification, prior to serving the drink or selling the bottle of liquor.

You can do anything you want in your room with your parents' consent, but in public areas, no cruise line will serve you.
